Head-Chef Stephane Pasquier trained with some of the best Michelin star chefs in Paris in the exciting and liberal eighties. Not one to fit the mould, he soon left the somewhat regimented world of Parisian chefing to try his luck in England in the mid-nineties. England was then at the start of its whirlwind ascent in the world of gastronomy.
